Famed French Bistro From New York’s Upper East Side to Open at Base of St. Paul Collection

BMC Investments (BMC), a Denver-based real estate investment company specializing in the development, acquisition and management of properties, announced Le Bilboquet, the famed boutique French bistro from the Upper East Side of New York City, will open in the St Paul Collection in the heart of Cherry Creek North. This is the fourth restaurant concept BMC has brought to the neighborhood, including Matsuhisa, Quality Italian and Departure Restaurant + Lounge already mainstays in the Cherry Creek dining scene.

“Cherry Creek North has evolved into a true dining and entertainment destination and Le Bilboquet will bring the premier French restaurant to Denver and Cherry Creek North, something it has been missing,” said Matt Joblon, CEO of BMC Investments. “With SoulCycle and CB2 already in place, the retail and restaurant offering at St. Paul Collection will be beyond compare.”

Le Bilboquet plans to open the new location in early 2019. It will feature traditional French cuisine as well as modern fare, including the restaurant’s signature Cajun chicken. It will mirror the East Coast original’s charm and atmosphere. The 6,700-square foot location at the corner of 3rd and St. Paul Street will feature two concepts – a traditional fine-dining bistro, open for lunch and dinner, as well as a Parisian-inspired café that serves breakfast and lunch. An expansive patio along 3rd Avenue will complement the eateries.

“We are proud and excited to bring Le Bilboquet to Cherry Creek which we find to be a vibrant and progressive community. We have numerous existing clients, both in New York and Atlanta, that live in Cherry Creek and we could not be happier that we have found a home in partnership with BMC in their existing and first-rate development in St Paul Collection. We hope to bring a slice of Paris to Rocky Mountains” says Le Bilboquet owners Philippe Delgrange and Rick Wahlstedt.

Sam Zaitz and Julie McBrearty of Legend Retail represented BMC Investments in the deal.

Designed as a micro-haven of sophisticated urban living, BMC’s St. Paul Collection is comprised of two towers offering 165 luxury rental residences and amenities including a rooftop deck with pool, hot tub and cabanas, resident clubhouse and a full-service concierge. The iconic mixed-use development also includes 55,000 square feet of ground floor retail to include Le Bilboquet, SoulCycle and CB2. The first St Paul Collection tower is scheduled for completion in spring 2018 with the second tower slated for fall 2018.
