Tell us about Pasty Republic

Pasty Republic specializes in English Style Pasties or Handmade Handheld savory pies. We offer on any given day up to 15 different verities from breakfast, steak, chicken and veggie pasties. Pasty Republic serves a quick meal on the go or to enjoy in the store. At a the reasonable price of $9.99 per pasty we provide our guests with a delicious handcrafted meal at a great value.

Over 10 years ago when introduced to The Cornish Pasty (the traditional English Pasty with Steak, potatoes, Rutabaga, onion and seasoning) I absolutely feel in love with “The Pasty” and what it could offer…. A delicious and filling meal all melded together in scratch made dough. I’ve worked in the restaurant and hospitality business since I was a teenager and thought that Pasties could be an unbelievable product to build a business around.

What sets you apart? 

What sets Pasty Republic apart from our competitors is that we Don’t really have any direct competitors. The Pasty is bigger than the empanadas, and it’s not really a sandwich as our ingredients are baked inside the crust. As a result the Pasty is able to play in a space that includes breakfast, brunch, lunch, dinner and late night (assuming you have pasties in the freezer at home). 

Tell us what you love most about what you do...

I love that the Cornish Pasty is culturally iconic. It’s amazing to talk to people who grew up eating their Grandmothers Pasties! I enjoy telling the history of the Pasty as it’s been around for over 500 years and has been the choice meal of kings but most notably the meal of the working class as they would take their Pasty for a hearty lunch as they headed off for a hard days work in mine.

I also love working the counter at our Cherry Creek store and getting to chat with people visiting Denver or getting to know better members of our Cherry Creek North community!

When your not working, how do you enjoy Cherry Creek North?

My wife and I have been enjoying Cherry Creek North on date nights for over 20 years; we love Cherry Creek Grill, Hillstone, the bar at Local Jones, and the Cricket. I’ve also enjoyed shopping at and getting to know our new neighbors at Johnnie O and TOWNhouse
